Cucumber Salad

Slice 2 large cucumbers. Put in a pretty bowl and marinate for several hours in:
1/2 cup white vinegar
1/2 cup white sugar
1/2 cup water
This is a big hit with the teenagers.
Sheryl Rosen:
I'd use a tablespoon of sugar, rather than 1/2 cup, otherwise, this is good.
I also add an onion, sliced thin, and some dillweed and paprika for color.
Add a pinch of salt to the water, too.
Great stuff, nice served with a pot roast or burgers and dogs.

Add red onion, and tomatoes.
Ken:
I often take marinated cucumbers to pot-lucks and they're always a hit. I use several different vinegars, such as wine, balsamic, apple cider, etc., and every batch is different. Sometimes I add ginger, or garlic, or pepper, or sesame oil and seeds at the end after draining.
Sometimes I do a combo of cukes and asparagus. Sometimes I .... This is a no recipe type of thing for me, just add stuff until I like it.
But one difference is that I always slice the cucumbers length-wise, remove the seeds, and then slice half inch or so horse-shoe shapes along the width of the two "canoes". This takes out the liquid around the seeds and stops the marinade from becoming watery so the cukes come out with a more intense flavor.
