Recipe: Cumquat Marmalade

Cumquat Marmalade

3 lbs. of cumquats
5 lbs. of sugar
6 pints of water
the juice of 2 lemons

Wash the fruit and slice them finely. Soak the seeds overnight in 1 pint of water, the fruit in what remains. Boil the fruit in the water from both the fruit and seeds until the peel is tender.

Add the sugar and lemon juice and stir this over a low heat until the sugar dissolves then boil rapidly until the jam sets.

Stand for 10 minutes before bottling. Store in refrigerator.
