Recipe(tried): Kumquat Marmalade

Kumquat Marmalade O.C. Howe

1 pint ripe kumquats
4 cups water
2 cups sugar
1 tablespoon lemon juice

Slice the kumquats in paper thin slices, removing the seeds, to measure 2 1/2 cups of slices. cover with the 4 cups of water and let stand overnight.

In a 6 quart pot, boil the kumquat mixture, uncovered, for 30 minutes. Now measure mixture into 3 quart saucepan. Stir in sugar and return to heat and boil hard until mixture sheets off a metal spoon, [4-5 minutes] stirring constantly.

Now stir in lemon juice. Ladle into hot, scalded jars and seal immediately. Store in refrigerator.

Makes 3 half pints of marmalade.
