Recipe(tried): Curry Marinade: For Tomatoes, Cukes and Mushrooms

Salads - Salad Dressings
This is a recipe that was used every year at our Church Luau. We make it often at home. It's very yummy! Goes well on buffet table too! Nice as a side with any salad meals.

Curry Marinade

1/4 c. Cider Vinegar
1/2 c. Salad Oil
1 garlic clove, minced or 1/2 tsp. garlic powder
1 Tbs. chopped parsley
1 tsp. Sugar
1 tsp. curry powder (or more to taste)
1 tsp. Salt
1/4 tsp. pepper

Combine all ingredients and mix well. Marinate slices of Tomatoes, Cucumbers and Mushrooms in mixture for 1-3 hours. Drain and serve on lettuce or line a cookie sheet with lettuce and put vegetables and marinade on top. I often do the latter as people like to sop the marinade with their bread or spoon over other salad stuff.
