Recipe: Prickly Pear Cactus Ranch Dressing

Salads - Salad Dressings
PRICKLY PEAR CACTUS RANCH DRESSING

3/4 cup prickly pear cactus jelly
1/4 cup mayonnaise
1/4 cup sour cream
1 clove garlic, minced
1 Tablespoon lemon juice
1 Tablespoon lime juice
1 Tablespoon dry ranch salad dressing mix, or to taste
3/4 Tablespoon cracked black pepper
3/4 Tablespoon balsamic vinegar
1/2 Tablespoon salt
1 teaspoon chopped shallots

Place all ingredients in a blender and emulsify until smooth. Serve on top of your favorite salad.

Makes 3/4 cup
