Coconut Date Balls
1/2 cup butter
1 cup brown sugar
1 cup flaked coconut
2 cups rice crispies
1 cup chopped nuts
1 cup chopped dates
Powdered sugar
Mix together nuts, coconut and rice crispies in a bowl.
Melt butter.
Add sugar and dates.
Stir while boiling for 7 minutes, at low heat.
Pour over dry ingredients.
Mix all together.
Roll into 50 little balls and roll in powdered sugar.
Rice Crispie Date Cookies
1/2 cup margarine or butter
1 pkg. dates (8 oz.) Dromedary chopped
3/4 cup granulated sugar
2 eggs
1 tsp. vanilla
1/2 cup nuts chopped (pecans or walnuts)
2 cups Rice Crispies
Coconut or powdered sugar
Melt butter in saucepan.
Beat eggs with sugar.
Add this mixture to butter and add the chopped dates next.
Cook 10 to 15 minutes on low heat.
Take off burner and add Rice Crispies, nuts and vanilla.
Take a teaspoon to a tablespoon of mixture and shape into a ball.
Roll in coconut or powdered sugar.
Makes 3 dozen approximately
