Mama's Sweet Potato Pie

3 cups canned sweet potatoes (I use Bruce's yams with orange and pineapple
sauce)(drained)
3 eggs, beaten
1/2 cup melted butter
2 1/2 cups sugar
1 cup milk
1 teaspoon cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
2 teaspoons vanilla extract
2 unbaked 9-inch pie shells (I use deep dish pie crusts)

Combine sweet potatoes, eggs, melted butter, sugar, milk, cinnamon, nutmeg, and salt in a
bowl and mix well. Stir in vanilla. Pour into pie shells. Bake at 425 degrees for 15 minutes.
Reduce oven temperature to 350 degrees. Bake for 1 hour or until set. Yield: 16 servings.

You can eat one now and freeze one. That's what we do! I hope that you enjoy this recipe.
My mama made it for years. It's from one of her favorite cookbooks. I have most of my
mama's cookbooks since she died. I consider them all to be treasures!
