IMPOSSIBLE AMAZING APRICOT PIE
1 (17 ounce) can apricot halves, drained
1 (12 ounce) can evaporated milk
1 cup Bisquick baking mix
3/4 cup sugar
3 eggs
1/4 cup margarine or butter
1 teaspoon vanilla
1/2 cup apricot preserves
Heat oven to 350 degrees. Grease a 10 x 1 1/2-inch pie plate.
Place all ingredients except preserves in blender. Cover and blend about 1 minute or until smooth. Pour into pie plate.
Bake about 40 minutes or until knife inserted in center comes out clean. Cool completely.
Heat preserves over low heat until melted. Spread over pie; cool. Garnish with sweetened whipped cream if desired.
