Recipe: Desserts Using Vanilla Wafers (5)

PINEAPPLE PUDDING
1 (20 oz.) can crushed pineapple
1 lg. box vanilla instant pudding
(prepared)
1 box Nilla WafersMERINGUE TOPPING:
2 egg whites
1/4 c. sugar
Layer wafers first, pineapple then pudding. Use until all ingredients are gone ending with
pudding. Beat egg whites stiff. Add sugar gradually. Spread over top of pudding. Use
extra wafers along edges of dish (if any). Bake 300 degrees for 5-10 minutes until golden
brown.


COCONUT PINEAPPLE SURPRISE
1 box vanilla wafers
1 (16 oz.) shredded coconut
1 (16 oz.) crushed pineapple
1 box (4 3/4 oz.) vanilla pudding mix
1/2 tsp. vanilla flavoring
1 can (5 1/4 oz.) pineapple rings
1 sm. (6 oz.) jar cherries
Mix pudding as directed on box. Put layer of cookies on the bottom, layer of pudding,
layer of pineapple and layer of coconut. Repeat until all ingredients are gone. Top with
pineapple rings with cherries in the middle of rings.


PINEAPPLE PUDDING
1 lg. can crushed pineapple, drained
1 pkg. vanilla wafers
1 sm. instant vanilla pudding
4 oz. Cool Whip
Make vanilla pudding according to directions and stir in Cool Whip. In large bowl, layer
items beginning with pudding, then wafers, pudding, pineapple, pudding, wafers, etc. Keep
in refrigerator until ready to serve.


SOUR CREAM PINEAPPLE PUDDING
1 (8 oz.) container Cool Whip
1 (16 oz.) can crushed pineapple
1 (8 oz.) container sour cream
1 lg. vanilla pudding
1 box vanilla wafers
2 c. milk
In a bowl mix milk and pudding together, then mix the Cool Whip, pineapple, sour cream
together. After that mix the pudding in also. In a bowl or pan, put a layer of vanilla wafers.
Then pour 1/3 of the mix over wafers. Then follow the directions 2 more times or until mix
is gone.


LAYERED JELLO SALAD
--BOTTOM LAYER:--1 c. toasted flaked coconut
1 3/4 c. crushed vanilla wafers
1/2 c. chopped nuts
1/4 c. melted oleo--
FILLING:--1 pkg. orange Jello (3 oz.)
1/4 c. boiling water
1 c. drained crushed pineapple--
MAKE PUDDING:--1 c. sugar
2 tbsp. flour
1 1/2 c. milk
3 egg yolks
Press into 9x13 pan. Spread over crust. Cook and thicken. Chill pudding mixture. Fold in
3 egg whites, whipped stiff and 1 cup Cool Whip. Spread over filling. Sprinkle with
remaining wafer crumbs.
