Recipe: Diner Style Meat Loaf

DINER-STYLE MEAT LOAF

1 small onion, chopped, about 1/2 cup
1/2 cup diced green pepper
1 clove garlic, crushed
1 1/4 lb. ground turkey
white of 1 large egg
1/2 cup spaghetti sauce
4 slices white bread, crumbled
1 T no-salt seasoning mix [I substitute salt and pepper)

Heat oven to 350 degrees.Spray a skillet with cooking spray and cook onion, green pepper and garlic about 5 minutes. Let cool and combine everything but about 2 T of the spaghetti sauce. Shape into a loaf on a sprayed shallow pan, brush with reserved spaghetti sauce. Bake 45 minutes. Makes 6 servings, 188 calories each.
