EASY-DO WHITE CAKE
2 cups sifted cake flour
1 teaspoon Arm & Hammer Brand or Cow Brand Baking Soda
1/2 teaspoon salt
1/4 cup vinegar
1/2 cup milk
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1/2 cup egg whites
1 1/3 cups sugar
1/2 cup shortening
Have all ingredients at room temperature.
Sift flour, baking soda and salt together.
Combine vinegar, milk and flavoring.
Beat egg whites and sugar together for 1 minute (125 strokes). Add flour mixture, shortening, and one half of the liquid. Stir until flour is moistened, Beat vigorously for 1 minute. Add remaining liquid. Beat 1 minute. Turn into two well-greased 8-inch layer pans, 1 1/4 inches deep.
Bake at 350 degrees F. (moderate oven) 30 to 35 minutes.
Makes 2 (8-inch) layers, 1 1/4 inches deep
