Dried Plum Oatmeal Bread
1 1/2 cups all-purpose flour plus 2 Tbsp for dusting
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
3/4 cup chopped dried plums
1 1/4 cups low-fat milk
1/2 cup uncooked oatmeal
3/4 cup granulated sugar
1/2 cup Fleischmann's Original Stick margarine, melted
1 medium banana, mashed
1 large egg
3/4 cup chopped pecans
PAM No-Stick Cooking Spray
Preheat oven to 350F.
In a large bowl, combine 1 1/2 cups flour, baking powder, baking soda, cinnamon, and ginger. Add the dried plums and stir to evenly coat with flour mixture. Set aside.
In a separate bowl, combine milk and oatmeal. Let stand 10 minutes. Stir in sugar, Fleischmann's, banana, and egg; mix until well blended. Add the milk mixture to the flour mixture and stir until just combined. Stir in pecans.
Coat a loaf pan with cooking spray and dust with remaining 2 tablespoons flour. Spread mixture evenly into the pan.
Bake 50 minutes or until a wooden pick inserted in the center comes out clean. Cool 10 minutes. Remove from pan and cool completely on a wire rack.
