Recipe: Easy As 1 2 3 Microwave Brownies

EASY AS 1 2 3 MICROWAVE BROWNIES

4 oz butter or margarine
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
1/2 cup unsweetened cocoa powder
2/3 cup flour
1 cup pecans; chopped
powdered sugar (for top)

Line an 8-inch square glass dish with wax paper.

In a medium bowl, beat together butter, sugar, eggs, and vanilla with an electric mixer on medium until light and fluffy, 1 to 2 minutes. Beat in cocoa. Add flour and beat until well blended. By hand stir in pecans. Spread evenly in prepared dish.

Cook in a microwave on High 3 minutes. Turn dish a quarter turn and cook 2 1/2 to 3 minutes longer. Let cool.

Sift powdered sugar over top. Cut into 16 or 25 squares.

Servings: 16-25
