Recipe: Easy Egg Salad Sandwiches

EASY EGG SALAD SANDWICHES

6 large eggs
1 small stalk celery, diced
1/3 cup mayonnaise or mayonnaise-type salad dressing
1 teaspoon minced onion
1 teaspoon sweet pickle relish
1 teaspoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon pepper
12 slices sandwich bread, toasted
Lettuce leaves
Tomato slices

Place eggs in large saucepan; add cold water to cover. Bring to boiling; cover, remove from heat and let stand 15 minutes. Immediately drain eggs; peel under cold running water.

Chop eggs; place in medium bowl. Add celery, mayonnaise, onion, pickle relish, mustard, salt and pepper; stir to mix well.

Spread 1/3 cup of egg salad on each of six of the bread slices; top with lettuce leaves and tomato slices. Top with remaining six slices bread. Cut each sandwich in half.
