EASY FILLED DROP COOKIES
FOR THE DATE FILLING:
2 cups dates, finely cut or ground
3/4 cup sugar
3/4 cup water
1/2 cup chopped nuts
FOR THE COOKIE DOUGH:
1 cup shortening or margarine, softened
2 cups brown sugar, firmly packed
2 eggs
1/2 cup buttermilk
1 tsp. vanilla
3 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
TO PREPARE THE DATE FILLING:
Cook ingredients for filling slowly, stirring constantly until thickened. Set aside.
TO PREPARE THE COOKIE DOUGH:
Preheat oven to 400 degrees F.
Mix margarine, brown sugar and eggs well. Stir in buttermilk and vanilla.
Sift together and stir in flour, baking soda, salt, and cinnamon.
Drop with teaspoon onto ungreased baking sheet. Place 1/2 teaspoon date filling on dough. Cover with 1/2 teaspoon dough.
Bake at 400 degrees F for 10 to 12 minutes or until lightly browned.
Makes approximately 4 to 5 dozen cookies
