Recipe: Easy Oatmeal Blueberry Muffins (using oats soaked in buttermilk)

EASY OATMEAL BLUEBERRY MUFFINS

1 cup buttermilk
1 cup oats, uncooked
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1/4 cup butter, melted and cooled
3/4 cup brown sugar
1 cup blueberries, fresh or frozen

Heat oven to 400 degrees F. Coat a muffin tin with cooking spray.

In a small bowl, combine buttermilk and oats. Let mixture soak for 10 minutes.

In a large bowl, stir together the flour, baking powder, baking soda and salt; set aside.

In a medium bowl, whisk the egg with a fork until light in color. Add melted butter, brown sugar and oat mixture to the egg. Gently fold wet ingredients into dry ingredients until just combined. Do not overmix. Fold in blueberries. Fill prepared muffin tins 2/3 full.

Bake for 18 to 20 minutes, until a tester comes out clean.

Makes 12 muffins
