Recipe(tried): Elegant Eggplant

A friend shared this dish with me. It's very good.

ELEGANT EGGPLANT

2 medium eggplants, peeled and cut into chunks
1 can mushroom soup
1 onion, chopped
4 garlic cloves, finely chopped
1 green pepper, diced
3 eggs
1 can Rotel Tomatoes with Chilies
1 teaspoon Worcestershire sauce
1 teaspoon salt
2 2/3 cups cracker crumbs
dash pepper
sharp cheese, grated

Boil chunks of eggplant until tender;drain well and mash. Preheat oven to 350. Add mushroom soup, onion, garlic and green pepper to mashed eggplant. Add eggs, tomatoes, Worcestershire sauce, salt and pepper. Mix well. Butter a casserole dish. Put half the eggplant mixture in the bottom of the casserole dish followed by half the cracker crumbs. Sprinkle with sharp cheese, then add the rest of the eggplant mixture followed by the remaining cracker crumbs. Dot with butter. Bake for 40 minutes at 350. Serves 12.
