SAUCY ZUCCHINI PARMESAN
5 cups (about 5 medium) sliced zucchini
3 tablespoons butter
1/2 cup chopped onion
3 tablespoons flour
3/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup Carnation Instant Nonfat Dry Milk crystals plus water to make
1 cup
1/4 cup (2-ounce jar) drained, chopped pimiento
1/3 cup grated Parmesan cheese
1/2 cup French fried onions
Parboil zucchini in salted water just until tender, about3 to 4 minutes. Drain well.
Melt butter in medium saucepan. Add onion. Saute until tender. Stir in flour, salt and pepper. Gradually add liquid instant milk. Cook over medium heat until thickened, stirring constantly (sauce will be quite thick).
Add zucchini, pimiento and cheese. Spoon zucchini and sauce into shallow buttered 1-quart casserole. Top with French fried onions.
Bake in moderate oven (350 degrees F) 15 minutes or until bubbly.
