FAVORITE COFFEE CAKE

1/2 c. margarine or shortening
3/4 c. white sugar
1 tsp. vanilla
3 eggs
2 c. flour
1 tsp baking soda
1 tsp baking powder
1 c. sour cream

Filling 1/3 c. margarine Mix altogether in a small bowl until smooth. 3 tsp. cinnamon 1 c. brown sugar
Cream margarine and sugar together, beat in eggs, one at a time, until well mixed. Add baking soda, baking powder and half of the flour, beat well. Next add 1/2 of the sour cream mixing well, then half the flour and repeat with the rest of the sour cream and then mix in the rest of the flour. Grease a bundt pan well, then dust with flour, shaking out the excess. Put 1/2 of the batter into the cake pan, the spoon in half of the filling, add the rest of the batter and top off with the remainder of the filling. Bake in a preheated 350 deg. oven for approximate 50 min. or until a toothpick comes out clean, when inserted into the cake. Cool in pan for 10 min., then turn our onto a cake rack to cool. This is a wonderful cake!

BLUEBERRY COFFEE CAKE

1 c milk
1/2 c margarine
1/2 c warm water
1/2 c sugar
1 1/2 Tbsp instant yeast
2 egg yolks -- beaten
1/2 tsp salt
2 3/4 c flour
1 grated lemon rind
4 c fresh or frozen blueberries
2/3 c sugar, for topping
2/3 c flour, for topping
1/2 c chilled margarine

Melt 1/2 c. marg. in 1 c. of milk. Add water, (use cold water if milk is too hot) add sugar and stir well. Cool, to warm. Add egg yolks, mixing well. Mix in flour, salt and yeast, make a well and add wet ingredients and lemon peel. Mix well, beating until air bubbles form in the dough. Spread on greased jelly roll pan 12 x 18, or 2 smaller ones. Sprinkle evenly with blueberries, do not thaw.
For topping: crumble remaining sugar. flour and chilled margarine together until crumbly. Sprinkle over berries. Let rise in a warm place for 1 hr. Bake in a preheated oven 350 deg. for 40-45 min. Cool and cut into bars or squares.

NOTES : This yeast coffee cake requires no kneading and is simple to make, using frozen berries.
