Favorite Shortbread Cookies
This is a recipe of my mom's that's both easy and delicious. It makes the lightest shortbread I've ever had. I don't have it written on the recipe card how many cookies it makes, but I think it's about 18. The recipe is easily doubled if you want to make more.1 3/4 cups flour
1/2 cup sifted icing sugar
1 cup soft butter
Mix flour and icing sugar. Cream butter thoroughly, then add dry ingredients gradually. Beat at medium speed with electric mixer till light and fluffy. Drop by teaspoonfuls on ungreased baking sheets, and flatten with a fork dipped in cold water. Bake at 350F for 15 to 18 minutes.
(Note: You can decorate these with colored sugar sprinkles or half a candied cherry before baking, if you like.)
