Here's one of the easiest potato salad recipes in the world...

To about 5 pounds of cooked red potatoes (skins ON), cooled and diced, add:

The non-wilting veggies of your choice (could be cucumber, onion - Vidalias are especially nice, celery, carrot, whatever!) diced or sliced to a comfortable eating size,

And toss in a dressing made of:

1 cup Hellman's mayonnaise
1/2 cup of your favorite Italian dressing (homemade or not!)

Chill for at least 12 hours. Very easy, very good!
