PARTY-BEST SPARERIBS
8 lbs. spareribs, cut into 2-rib sections
1 (6 oz.) can frozen orange juice concentrate
1/4 cup prepared mustard
1 teaspoon ground ginger
1 teaspoon garlic powder
1 teaspoon allspice
1/2 cup honey*
1 cup lemon juice
1 cup soy sauce
Place spareribs in two large shallow roasting pans.
Bake at 325 degrees F for 30 minutes, drain fat, then bake for an additional 30 minutes. Drain fat again. Cool.
MEANTIME MAKE A MARINADE:
Empty orange juice concentrate into a large bowl, then stir in mustard, spices and honey. When well blended, stir in lemon juice and soy sauce.
Arrange the cooled ribs in a bowl and the marinade over them. Cover bowl and refrigerate overnight. Turn and rearrange spareribs once to make sure that all parts are marinated.
ONE HOUR BEFORE SERVING TIME:
Arrange ribs in shallow pans and bake at 350 degrees F for 45 minutes, brushing once during baking time with marinade.
If desired, garnish each plate with pineapple chunks and halved orange slices. Serve hot.
*The boys didn't like "sweet spareribs." If you do, you may want to increase honey to 1 cup.
