Recipe: First Lady Wheaties Coconut Cookies (Lady Bird Johnson, 1960's)
Desserts - Cookies, Brownies, BarsThis is a recipe for Wheaties Coconut Cookies by Lady Byrd Johnson, published in a newspaper article in 1964.
FIRST LADY WHEATIES COCONUT COOKIES
1/2 cup shortening (like Crisco)
1/2 cup butter
1 cup brown sugar
1 cup white granulated sugar
2 eggs
2 cups of flaked coconut
2 to 2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
pinch salt
1/2 teaspoon vanilla extract
2 cups Wheaties Cereal
Preheat oven to 400 degrees F.
Blend shortening, butter and sugars. Add beaten eggs. Add coconut.
Sift together the flour, baking soda, baking powder and salt, and add to mixture. Blend in vanilla.
Stir in the Wheaties Cereal. Roll into balls the size of a walnut and place on cookie sheets.
Bake at 400 degrees F for 12 minutes.
Makes about 4 dozen
