Recipe: Carrot Raisin Brownies (Using brown sugar and walnuts)

CARROT RAISIN BROWNIES

1 1/2 cups light brown sugar, packed
1/2 cup butter or margarine, softened
2 eggs
1 tsp vanilla
1 1/2 cups unsifted flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup raisins, chopped
1 1/2 cups finely grated carrots
1/2 cup walnuts, finely chopped

Preheat oven to 350 degrees F (moderate). Grease a 9x13-inch baking pan.

Mix sugar and fat. Add eggs and vanilla; beat. Stir in dry ingredients. Add raisins and carrots; stir. Spread mixture into baking pan; sprinkle with walnuts.

Bake about 40 minutes or until a toothpick inserted in center comes out clean. Cool; cut into squares.

Makes 24 brownies
