Recipe: Cheese Puffs

1 cup water
1 stick (1/4 lb.) unsalted butter
1 cup self rising flour
1/8 teaspoon salt
3 large eggs
1 cup sharp cheddar (or your favorite) shredded cheese
In a small sauce pan, heat 1 cup water to a boil. Add butter and remove from heat. Stir until butter melts and let cool for 5 minutes.
Add flour and salt and stir until there are no lumps or white or dry specks. Stir in the 3 eggs. Fold in cheese. Drop by tablespoon onto a parchment or wax paper covered sheet pan.
Place pan in an oven pre-heated to 450 degrees F for 10 minutes to allow steam to expand inside. After 10 minutes, reduce temp to 400 degrees until puffs are lightly browned. Total baking time 15-20 minutes.
Try to eat them all that day, they're not as good the second day.
