Last fall a neighbor had an ABUNDANCE of apples - and we got several HUGE bags-full.
I peeled and sliced many of the apples and combined with sugar, cinnamon etc - my 'typical' apple filling. I did not make crusts. I simply lined pie pans with heavy duty foil - then put in the correct amount of filling - a wee bit more thanusual - put in freezer until solid. Took out and wrapped the remaining foil around - and then layered several of these (wrapped in foil)_ into large freezer ziploc bags. When I was ready to bake - I'd make my crust - put the filling in - and bake. If I remembered- i would remove the filling from the freezer to the refrigerator before I started the crust - but sometimes I forgot. I did not thaw completely. We've been pleased with all of these. have 1 left!
I also did some 'apple crisps' the same way - lined pans with heavy duty foil - put in the apple mix - and streusel atop - froze - and then removed from the pans - put rest of foil over and into bag and froze. They came out pretty tasty too.
I'm sure there must be info SOMEWHERE in how to do it with the crust --- but I probably wouldn't have room for that in the freezer - would have to be too careful not to break the top crust, etc. So this works best for me.
