Recipe(tried): Peeling Tomatoes

Preserving - Other
Christine,

Here's what I do to peel tomatoes easier and so they are not mushy. if you have refrigerator space, put the tomatoes in the frig till cool.

When you prep the tomatoes, make sure the water is boiling lightly, not a hard roiling boil, but a nice light bubbly boil. Hurry up and throw the tomatoes in, roll them around for just a few seconds, then hurry up and scoop them out to the cold water.

The tomatoes don't have to be chilled in order for this to work great, just turns out a little easier.

I don't wait till the skins cracks, mine turned out mushy that way. sometimes you may have to put the tomatoes back in the lightly boiling water if it doesn't peel perfectly, but this works for me, hope it does for you.
