FRENCH CRUMB CAKE
2 cups bread flour
1 1/2 cups sugar
3/4 cup Crisco
2 heaping teaspoons double acting baking powder
3/4 teaspoon salt
2 eggs, well beaten
3/4 cup milk
1 teaspoon vanilla
1 tablespoon ground cinnamon
Preheat oven to 350 degrees F. Grease and flour 2 (8x8x2-inch baking pans)
Mix flour, sugar and Crisco until crumbly. Remove 3/4 cup and save for topping.
Add baking powder, salt, eggs, milk and vanilla to remaining mixture. Beat well. Put in prepared pans and sprinkle top with remaining crumbs and cinnamon.
Bake at 350 degrees f for 25 minutes.
