For 30 years I have canned a tomato/zucchini/onion/garlic mixture with very good results. I usually can it in quarts and use 1 tsp. pickling/canning salt for each quart. Depends on what's in the garden how much percentage of tomotoes to zucchini to onion. I use the pressure required for my altitude. I look up the time chart for each vegetable used and use the longest time listed. Hope this helps you.
