FRESH LETTUCE STIR-FRY
2 tablespoons butter or margarine
1/4 cup chopped onion
1/4 cup chopped fresh green bell pepper
1/4 cup chopped fresh red bell pepper
4 cups shredded lettuce (1 small head)
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon dried leaf basil, crumbled
1/4 teaspoon salt
1/8 teaspoon ground black pepper
In large skillet melt butter; cook onion, green pepper and red pepper over medium heat until tender.
Stir in lettuce, lemon juice, basil, salt and pepper. Cook quickly 3 to 5 minutes, stirring frequently.
Makes 4 servings
