I wish Happy Mother's Day to all the sweet mothers of the world !!!
I surprised my mother by baking this delicious muffins with fresh strawberries this morning. Great taste, great smell and great color.
Note: if you don't have nonfat buttermilk, substitute as I did, stir 1 cup of nonfat milk and 1 TB lemon juice(or white vinegar). Also, the recipe as written yields 18 muffins. The mixture I did, was enough for 14 standard size muffins.
Finally, I saw the recipe posted three times in this board. To prevent you from searching I copied it from the clippings.
Enjoy and have a nice Sunday !!!!!

Here is a recipe using fresh strawberries...no oatbran.
Fresh Strawberry Muffins (source unknown)
2 1/2 C flour
2/3 C sugar
1 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. salt
1 1/2 C sliced fresh strawberries
1 C nonfat buttermilk
1/3 C. margarine, melted
1 1/4 tsp. vanilla extract
1 egg, lightly beaten
1 egg white, lightly beaten
Vegetable cooking spray
1 1/2 TB sugar
Combine flour and next 4 ingredients in a large bowl, and stir well. Add fresh strawberries; stir well, and make a well in center of mixture.
Combine buttermilk and the next 4 ingredients; stir well. Add to dry ingredients, strirring just until moistened.
Divide batter evenly among 18 muffin cups coated with cooking spray; sprinkle 1 1/2 TBs sugar evenly over muffins. Bake at 350 degrees or until done. Remove from pans immediately; let cool on a wire rack.I think you could use frozen strawberries if you adjusted the amount of milk as moisture.
