Recipe: Fried Cabbage

Here are a few variations of Fried Cabbage.

FRIED CABBAGE

1 head cabbage
4 eggs
salt and pepper to taste

Boil 1 head of shredded cabbage. Drain and spread on
platter into pattie shapes. Salt and pepper well. Beat 4 eggs
and season well. Dip cabbage patties into egg mixture and drop
into about 1-inch hot greased in iron skillet. Brown on one
side, then turn over and brown on other side. Drain on paper
towels twice to get all grease out.

FRIED CABBAGE

1 large head cabbage
3 to 4 medium size ripe
tomatoes, peeled
salt and pepper to taste
garlic powder to taste
3 to 4 Tbsp. oil

Slice cabbage, heat oil in large skillet. Add cabbage,
tomatoes and remaining ingredients to cabbage and fry on medium
heat until cabbage is done.

FRIED CABBAGE

1 large cabbage
1 onion
1 tsp. vinegar
cherry tomatoes
1 tsp. salt
1 1/2 tsp. sugar
4 slices bacon
cayenne pepper to taste

Cook bacon until crispy; drain on paper towel. In same
skillet, put chopped cabbage, onion and salt with bacon drip-
pings. Cover and cook slow for 15 minutes. Add sugar, cayenne
pepper and vinegar. Slice cherry tomatoes in quarters and
place on top. Simmer for 5 minutes.

FRIED CABBAGE

2 1/2 lb. cabbage
3 strips bacon
1/4 c. vinegar
1 tsp. sugar
salt and pepper to taste

Shred cabbage medium fine. Set aside. Fry bacon until
crisp. Break into pieces and add cabbage and saute, stirring
constantly. Add vinegar, sugar, salt and pepper. Serve
immediately.
