Recipe: Oriental Chicken Salad (with snow peas, water chestnuts, and chow mein noodles)
Salads - Main DishORIENTAL CHICKEN SALAD
FOR THE DRESSING:
1/2 cup sugar
1/4 cup water
1/4 cup vegetable oil
1/4 cup catsup
3 tbsp. cider vinegar
1 tbsp. soy sauce
1 tbsp. cornstarch
FOR THE SALAD:
1 medium head iceberg lettuce, torn
2 cups cubed, cooked chicken
1 cup salted cashews
1 (8 oz.) can sliced water chestnuts
1 (6 oz.) pkg. frozen snow peas, thawed
1 (3 oz.) can chow mein noodles
1/4 cup chopped green onion
TO MAKE THE DRESSING:
In a small saucepan, combine the ingredients for the dressing. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool.
TO MAKE THE SALAD:
In a large bowl, combine the salad ingredients; add the cooled dressing and toss to coat.
Serve immediately.
Servings: 8-10
