Recipe: Frozen Strawberry Jam
Misc. Hi Pat,
Here are two recipes useing frozen strawberries. If you toss the juice out, the jam will become very solid, the juice gives it the jam consistency.
FROZEN STRAWBERRY JAM
2 (10 oz.) pkg. frozen
strawberries
1/4 c. powdered pectin
2 1/2 c. sugar
1 Tbsp. lemon juice
In a 3 quart dish, thaw berries (High 4 to 6 minutes)
until mixture boils; blend with sugar and lemon juice (High 7
to 9 minutes), stirring every 2 minutes until it comes to a
full boil for 1 minute. Test for doneness. Makes 1 quart.
For fresh strawberries substitute 2 cups fresh berries,
1 1/2 cups sugar, 2 teaspoons powdered pectin in recipe. Store
in refrigerator or freeze.

the 3 quart glass casserole for 3 1/2 minutes. Stir and cook

about 1 minute longer and test. Skim. Stir well. Pour into
glasses and cover with paraffin.
