FUDGE FILLED ROLLOVERS
1 1/4 cups flour
1 (3 oz.) cream cheese, softened
1 1/2 sticks (3/4 cup) butter, softened
1/2 cup sugar
1/3 cup cocoa
1/2 tsp. vanilla
1/8 tsp. salt
1 egg yolk
1/2 cup finely chopped walnuts
In medium bowl mix flour, cream cheese and 1 stick (1/2 cup) of the butter. With hands, knead until blended. Shape into balls wrap in plastic and place in refrigerator.
In small bowl beat sugar, cocoa, vanilla, salt, egg yolk, and the remaining 1/4 cup butter. Beat on high. With spoon stir in nuts and set aside.
Preheat oven to 350 degrees.
On lightly floured surface roll dough with floured rolling pin into 12 1/2-inch square. Cut into twenty-five 2 1/2-inch squares. Place rounded teaspoon of filling into corners to center, twist to seal. Place on ungreased cookie sheet 1/2 inch apart.
Bake 20 minutes or until lightly brown.
