Recipe(tried): Sour Cream Banana Bread

SOUR CREAM BANANA BREAD

1 cup sugar
1/2 cup vegetable oil
2 eggs
1 cup mashed banana
1/2 cup sour cream or vanilla yogurt
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt

Preheat oven to 350 degrees. Grease and flour bottom only of a 9x5 inch loaf pan.

In large bowl, beat together sugar and oil. Add eggs, bananas, sout cream or yogurt, and vanilla; blend well. Add flour, baking soda, and salt; stir just until dry ingredients are moistened. Pour into prepared pan.

Bake at 350 for 50-60 minutes. Cool 5 minutes; remove from pan and cool completely. Wrap tightly and store in refrigerator.

For a healthier bread, I use 3/4 cup whole wheat flour and 3/4 cup all-purpose flour. I usually add 1/2 cup or so of chopped walnuts also.
