Recipe: Glazed Fish for both June and Marilyn

Main Dishes - Fish, Shellfish
Glazed Fillets

4 halibut, haddock or cod fillets (1lb/500 g)
1/3 cup (75 mL) light mayonnaise

Variation 1:
2 tablespoons (25 mL) finely chopped black olives
1 teaspoon (5 mL) grated lemon rind
1 tablespoon (15 mL) lemon juice
2 teaspoons (10 mL) chopped fresh thyme
Pinch pepper

Variation 2:
4 teaspoons (20 mL) finely chopped oil-packed sun-dried tomatoes
2 teaspoons (10 mL) chopped fresh parsley

Preheat oven to 450 degrees F (230C).

Place fillets on greased or foil lined rimmed baking sheet. Stir mayonnaise with ingredients; spread over fish. Roast for calculated time: 10 minutes per inch or when fish flakes easily with tested with fork.
