Recipe(tried): Pasta with Shrimp and Spinach in Creamy Garlic Sauce

PASTA WITH SHRIMP AND SPINACH
IN CREAMY GARLIC SAUCE


12 oz pasta, uncooked
1 lb shrimp
3 tablespoons butter
3 tablespoons olive oil
3 tablespoons chopped garlic
20 large fresh spinach leaves, stems removed
1/2 pint heavy (whipping) cream
1/2 pint half-and-half
Salt and pepper, to taste

Cook pasta according to package directions; drain.

Shell and devein the shrimp. Leave them whole. Melt butter in olive oil and add shrimp and garlic. Saute for 2 minutes.

Add spinach to the shrimp and saute 2 minutes. Add heavy cream and half-and-half and bring just to a boil.

Take off heat and add salt and pepper to taste. Toss with pasta and serve hot.

VARIATIONS:
- You may add more garlic and/or spinach if you like. It's a personal preference.
- You may add grated cheese if you like. I do even though most Italians don't add cheese with fish.
