GLAZED PORK LOAF
A family favorite - meat loaf - cooks all day and provides leftovers for sandwiches tomorrow. Serve with buttered broccoli spears and mashed potatoes.
1 1/2 pounds lean ground pork
1/4 cup applesauce
1/4 cup ketchup
1 teaspoon hot pepper sauce
3/4 cup seasoned dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 cup finely chopped onion
1 egg
2 tablespoons Worcestershire sauce
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
In large bowl, blend together all ingredients well. Form into a 7x4 1/2x2-inch loaf; place in cooker.
Cover and cook on High for 4 hours or on Low for 8-10 hours, until a meat thermometer inserted reads 160 degrees F.
Carefully remove pork loaf from cooker (see following tip); let cool 10 minutes before slicing to serve.
Tip: To ease removal of the pork loaf from the slow cooker, fold two 24-inch-long pieces of aluminum foil in half lengthwise, then in half lengthwise again. Place strips across each other, forming a cross in the bottom of a 3 1/2 or 4-quart slow cooker. Press strips against the inside of the slow cooker, letting ends hang over the outside.
