Recipe(tried): Goddess Chicken (chicken breasts baked with artichoke hearts and sundried tomatoes)

GODDESS CHICKEN

2 to 2 1/2 lbs. boneless, skinless chicken breasts, cut into thirds
1 (14 oz.) can artichoke hearts, drained and cut into 1/2 inch pieces
1 (3 oz.) bag sundried tomatoes, cut into 1/2-inch pieces
3/4 cup Annie's Natural Goddess Dressing (or use good quality creamy Italian or Caesar dressing)
1/2 cup water

Preheat oven to 350 degrees F.

Place chicken pieces, artichoke pieces and tomatoes into a large baking dish with sides.

In a measuring cup, whisk together dressing and 1/2 cup water. Pour mixture over items in dish. Turn chicken several times to coat with the sauce.

Bake the chicken uncovered for 25 to 30 minutes, or until chicken is cooked through, flipping once and spooning sauce over it during baking.

Makes 8 servings
