GOLDEN GLOW MUFFINS
2 cups whole wheat flour
1/2 cup nuts, chopped
1/2 cup seedless raisins
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup salad oil
1/2 cup honey
1/4 cup orange juice
2 eggs
1 teaspoon vanilla
1 teaspoon grated orange peel
1 cup carrot, shredded
Preheat oven to 375 degrees F. Paper-line or greased 18 muffin pan cups.
In large mixing bowl, combine flour, nuts, raisins, baking powder, cinnamon, and salt. Set aside.
In small bowl, blend together oil, honey, orange juice, eggs, vanilla, and orange peel. Add to dry ingredients.
Stir in carrots until moistened. Spoon batter into prepared muffin pan cups.
Bake at 375 degrees F 20 to 25 minutes.
