Recipe: Golden Rice

Golden Rice

3 cups raw carrots, shredded
2 tablespoons onions, chopped
cup uncooked rice
2 cups cheddar cheese, grated
2 eggs
teaspoon pepper
2 teaspoons salt
cup milk

Wash rice and cook according to package directions. Cook carrots and onions with the rice in a small amount of water for 5 minutes. Drain and combine the rice with the cheese, reserving a half-cup of cheese for the top. Add beaten eggs, milk, salt and pepper. Place in a buttered casserole and sprinkle reserved cheese over top. Bake in a moderate oven 20 minutes, or until an inserted knife comes out clean.
