Recipe: Bistro Mashed Potatoes

Bistro Mashed Potatoes

5 lb. russet potatoes
lb. butter
1 c sour cream
c whole milk
1 c shredded cheddar cheese
3 slices bacon, chopped and cooked
2 T chopped fresh parsley
ground black pepper to taste
salt to taste

Boil potatoes until soft, about 20 minutes. Using a hand mixer, beat with milk and butter; mix well. Add sour cream, cheese, bacon, salt and pepper. If potatoes are too thick add more milk and adjust seasonings as needed. Serves 12.
