CHICKEN CACCIATORE
1/3 cup shortening
1 (3-pound) chicken, cut in pieces
1 medium onion, thickly sliced
1 large green pepper, cut in 1/4-inch strips
1 clove garlic, peeled and minced
1 3/4 cups drained canned tomatoes
1/2 cup canned tomato sauce
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon ground allspice
1 bay leaf
1/4 teaspoon thyme
Dash cayenne pepper
Heat shortening in large skillet. Fry chicken until golden brown, then place chicken to one side in skillet; brown onions, green pepper and garlic on other side. Rearrange in skillet for even distribution of chicken and seasonings.
Combine tomatoes, tomato sauce and spices and add to skillet. Cover and simmer for 30 to 40 minutes or until chicken is tender.
Serve chicken with sauce from skillet poured over it.
