Recipe: Port and Garlic Beef

PORT AND GARLIC BEEF

1/4 cup Port
2 teaspoon dark soy sauce
1/2 teaspoon oil
1 teaspoon crushed garlic
1 to 1 1/2 beef fillet in one piece
1 cup strong chicken stock
1 teaspoon sugar
1 teaspoon tomato puree
1 tablespoon lemon juice
1 tablespoon corn starch
1 tablespoon snipped chives
black pepper

Combine the port, soy sauce, oil, and garlic, and marinate the beef overnight.

Reserve the marinade. Tie the beef with string.

Roast for 40 minutes at 350 degrees F (190 C). Remove and keep warm.

Deglaze the pan with the marinade.

Add the combined remaining ingredients and stir over medium heat until the sauce boils and thickens.
