GRANDMA PILLAR'S HOMEMADE PIROHY
FOR THE POTATO FILLING:
5 medium potatoes
2 slices longhorn cheese
1 teaspoon salt
FOR THE PIROHY DOUGH:
1 cup water
2 eggs
1 teaspoon salt
4 cups flour
TO FRY PIROHY:
1/4 cup (1/2 stick) butter
sliced or chopped onions
PREPARE POTATO FILLING;
Cook and mash potatoes, grate cheese into hot potatoes and add salt; mix well. Set aside.
Bring a pot of water to a boil.
PREPARE THE PIROHY:
Mix water, eggs, and salt in a bowl. Gradually add flour to make a soft dough. Knead until air bubbles appear. Dough should be soft and not sticky. Divide dough into two parts.
Roll one part thin, then cut with round glass or cookie cutter. Place desired filling in center of each circle. Turn and pinch edges to seal.
Drop in boiling water until pirohy comes to top (should be about 10 minutes).

Place butter in a skillet on medium heat, melt butter. Add onions to the butter. Brown onions in pan with butter. Place cooked pirohy in the browned onions and butter. Toss in pan until coated (my grandmother and myself fry them a little in the onion and butter until the tops are a little brown.)
