Recipe(tried): Great Leek Soup recipe -

Got this wonderful hearty but simple soup recipe the other day from a friend -

LEEK SOUP

1/2 cup butter, melted
1/2 cup flour
3 cans chicken broth or stock (14 oz. each)
2 bunches of leeks, cleaned well, trimmed and chopped (I do it Rachael Ray's way - chop them first, then put them in a big pan of water, swish them around and any sand falls to the bottom - then scoop them into strainer to drain)
1 tsp. pepper
1 1/2 cups heavy cream
1 1/4 cups shredded swiss cheese (5 oz.)

In a small bowl, combine the melted butter and flour until smooth. Set aside.

In soup pot, combine broth, leeks and pepper, bring to a boil over high heat.

Reduce heat to low, cover and simmer 25-30 minutes or until leeks are tender.

Stir in butter mixture until soup is thickened. Simmer 5 minutes then slowly stir in the heavy cream. Mix well. Add the cheese, stirring contantly until melted.

Serve immediately. Great with crusty bread and a salad on a cold night!
