Hi Alicia
I found this recipe in an older Southern Living magazine and it was submitted by a gal in Collinsville, Virginia.
If you don't have a good dumpling recipe, the recipe on the Bisquick box makes nice/fluffy dumplings.
GREEN PEAS AND DUMPLINGS
3 pounds fresh green peas*
3 cups water
2 teaspoons salt
Dash of pepper
1/2 cup butter or margarine
1/4 cup all-purpose flour
1/2 cup evaporated milk (not condensed)
1 (8-ounce) package refrigerated biscuits
Onion salt
Shell and wash peas; drain.
Combine water, salt, and pepper; bring to a boil. Add peas; simmer 5 minutes.
Melt butter in a heavy saucepan over low heat; add flour and cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
Stir sauce into peas. Top with biscuits. Sprinkle lightly with onion salt. Cover; cook 15 minutes or until biscuits are done. Yield: 6 servings.
*3 cups frozen peas may be substituted for fresh peas.
A recipe for 10 to 12 drop dumplings may be substituted for refrigerated biscuits.
