Recipe: Green tomatoes

I have tried none of these so hope you will find something you can use.

Baked Tomato Surprise

6 green tomatoes
salt and pepper
6 eggs
2 teaspoons minced onion
2 teaspoons minced parsley
2 tablespoons oil or butter
6 thin squares of bacon
Wash the tomatoes and cut a thin slice from blossom end of each. Scoop out the pulp from the centers and set aside for other use. Sprinkle inside with salt and pepper. Drop a raw egg into each tomato. Heat the oil or butter and cook the onion and parsley for 5 minutes. cover the eggs with a ittle of the cooked mixture and top with a piece of bacon. Arrange in a baking dish and bake 375 degrees 20 minutes.

Fried tomatoes
6 medium green tomatoes
1 egg
1/2 cup fine dry bread crumbs
1/2 teaspoons salt
dash pepper
Slice the tomatoes about 1/2 inch thick. Beat the egg slightly and season with salt and pepper. Dip the slices in the crumbs, then in the seasoned egg and again in the crumbs. Fry in a small amount of fat in a skillet until delicately brown on both sides.

Green Tomato Curry
1 onion
3 tablespoons dripings or other fat
4 cups sliced green tomatoes
3 cups chopped cooked meat
2 teaspoons curry powder
salt
Cook the onion in the fat. Add the green tomatoes, cover and cook until tender. Add the meat and heat thoroughly. If the mixture is too thick, thin it slightly with meat broth, gravy or water. Season to taste with curry powder and salt. Serve with boiled rice or noodles. Serves 6

Green tomato marmalade
3 quarts slice green tomatoes
6 cups sugar
1 teaspoon salt
6 lemons
1 cup water
Combine tomatoes, sugar and salt. peel the lemons and slice the peel very thin. Boil in the cp of water for 5 minutes and draian. Slice the lemon pulp and remove the seeds. Add with the rind to tomato mixture. Heat slowly to boiling, then cook rapidly, stirring constantly for 45-60 minutes or until thick. Pour into hot sterile jars and process in water bath. Makes about 4 pints.

Green tomato Mincemeat
4 quarts chopped green tomatoes
2 quarts pared, finelly chopped tart apples
1 pound seedless raisins
4 tablespoons minced citron, lemon or orange peel
1 tablespoon ground cinnamon
2 teaspoons salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
2 cups firmly packed brown sugar
3 cups granulated sugar
3/4 cup vinegar
1/4 to 1/2 cup lemon juice
2 cups water
Combine all the ingredients and cook mixture slowly until tender and slightly thickened. Stir often to prepvent sticking. Pour into hot sterile jars and process 10 minutes in boiling water bath. Makes 4 quarts. Use 1 quart per 2 crust pie.

Green Tomato Pie
pastry for 9 inch double crust pie
6-8 medium green tomatoes
2 tablespoons lemon juice
1 teasooon grated lemon or orange rind
1/2 teaspoon salt
1/4 teaspoon cinnamon
3/4 cup sugar
2 tablespoon cornstarch
1 tablespoon butter
Wash tomatoes, remove stem ends and slice. Combine with the lemon juice, rind, salt and cinnamon in a saucepan and cook for 15 minutes, stirring often. Mix the sugar and cornstarach. Add it to the mixture and cook until clear, stirring constantly. Add the butter. Cool slightly. Line a pie pan with pastry. Pour in the mix. cover with other pastry; seal edges and cut several gashes to allow steam to escape. Bake 435 for 40-50 minutes.
