Recipe: Mediterranean Halibut (not Cheesecake Factory's) (serves 2)

MEDITERRANEAN HALIBUT

2 tbsp olive oil
1/2 tbsp minced fresh garlic
1 (11.5 oz) can diced tomatoes
1/4 cup white wine
1 tbsp tomato paste
1/4 cup whole pitted Kalamata olives
3 tbsp dried oregano
1 tsp salt
1 tsp pepper
3 tbsp dried basil
2 tbsp parmesan cheese
2 (10 oz) halibut fillets

Heat oil in sauce pan over medium-high heat. Add garlic and saute garlic for 1 minute.

Add diced tomatoes, white wine, tomato paste, olives, oregano, salt and pepper.

Simmer for 10 minutes then add the basil and parmesan cheese.

Preheat oven to 425 degrees F. Grease a baking sheet.

Place fish on prepared sheet pan. Spoon tomato mixture over the top of fish.

Bake 12-15 minutes or until fish is cooked through.

Serves 2
